Tangy tomato treat

This wonderful dip can make an amazing difference to your snacks.For a change, have it as a condiment minus the steaming white rice full of carbohydrates. Try it with your fried chicken wontons, oven-roasted chicken or grilled fish.

Serves: Four

Ingredients

2 large ripe tomatoes (chopped)

2 small red chilli (seeded and chopped)

1 small red onion (chopped)

One-third cup fresh coriander (chopped)

2 tbsp white vinegar

1 tbsp fresh lime juice

Salt to taste

Freshly ground black pepper

Preparation

In a bowl, combine tomatoes, red chilli, onion and cilantro.

Combine vinegar and lime juice in a small bowl, mix well and add to the tomato mixture.

Stir and season with salt and pepper.

Cover and allow to stand at room temperature for 15 minutes before serving.
