Life has suddenly changed and we are all adapting to the “new normal”. They say when this dark period in history finally passes, there will be a pre-Covid-19 and a post-Covid-19 world. Well, I am glad that one thing has not changed in the midst of this gloom — the supply of mangoes! For me, summer officially begins every year with that first delightful bite of this fruit and the joy carries on while creating innovative dishes with it. So, go on, load up on this glorious yellow fruit and bring some sunshine into your life with these easy mango recipes.

No churn mango cardamom ice cream

This is a quick method of making homemade ice cream without a machine. Use the same measurement of whipped cream and condensed milk and have fun playing around with the flavours!

Ingredients

  • Condensed milk: 200g (½ cup)
  • Unsweetened whipping cream: 250ml (1 cup)
  • Mango puree: ½ cup
  • Crushed cardamom (optional): ½tsp

Method

  1. Chill cream in the fridge. Whip the cream till you have soft peaks.
  2. Combine the mango puree, cardamom and condensed milk.
  3. Mix in the whipped cream with the mango mix.
  4. Pour the mix into a chilled loaf tin/cake tin and freeze for minimum 3 hours.

Mexican mango salsa

While raw mangoes with namak and mirchi is an Indian classic, the Mexicans take it up a notch by using sweet ripe mangoes in a savoury tangy salsa that is super addictive. Wrap it up in a roti or pair it with some spiced rice and enjoy as your taste buds break into a dance.

Ingredients

  • Small onion, finely chopped: 1
  • Mangoes, diced: 2
  • Fresh coriander, roughly chopped: 1/4 cup
  • Jalapeno slices: 4, or green chilli, finely chopped: 1
  • Lime: 1
  • Salt and black pepper: ½tsp

Method

  1. Combine all the above ingredients. Taste and adjust the flavours.
  2. Chill in the fridge for half an hour to let the flavours blend together.

Asian raw mango and veggies salad

This is a delicious and colourful salad and the addition of raw mango gives it a refreshing tang.

Ingredients

  • Raw mangoes, thinly sliced: ½ cup
  • Carrot, thinly sliced: 1
  • Cucumber, thinly sliced: 1
  • Cabbage, thinly sliced:½ cup
  • Rice noodles/any grain, boiled: 1 bunch/1 cup
  • Mint leaves: a handful
  • Coriander leaves: a handful
  • Peanuts: a handful
  • Toasted sesame seeds (optional)
  • For the dressing:
  • Light soy sauce: 4tbsp
  • Honey: 2tbsp
  • Green chilli, chopped: 1
  • Juice of 1 lime

Method

  1. Combine the veggies and herbs in a bowl.
  2. Combine the dressing in a bowl.
  3. Toss in the noodles or grains, peanuts and sesame seeds. Taste and adjust the flavours.
  4. Serve straight away.
