The poolside affair has officially flagged off the winter season at the Alipore star hotel with soups, salads, meats and steaks. The mains will be served in signature GBTP style — on black rock grills that will help keep the food hot for longer.

The classic Cottage Cheese Roll has a pickled edamame stuffing and is rolled and cooked in the oven with tandoori masala and a saffron sauce. It is served with charred vegetables and mashed potato.

Roasted Butternut Squash, Sage Cream served with freshly-baked chilli onion croissant is stuff that vegetarian winter dreams are made of. Flavoured with sage, the butternut squash is roasted and then slow-cooked with hints of onion, olive oil and pepper with a dash of cream on top. Rs 575-plus
A generous chunk of Duck Breast, crisp on the outside and tender inside, marinated with thyme and rosemary to complement the meat’s flavour, is served with a creamy polenta and in-house GBTP salad. Rs 2,275-plus
Fresh White Pomfret with a mild chilli marination (to retain the freshness of the fish) is served with makhani sauce that has been finished with cream and butter. Bite into some dahiwala lachcha pyaaz salad, served on the side. Rs 1,375-plus
Calcutta’s favourite fish gets a European twist in the Chargrilled Kolkata Bekti (Ambedi Fish Tikka) that is served with a raw mango salsa and a creamy onion salad. The fish marinated with raw mango, coriander and mint paste is cooked on tandoor and then served with the light and tangy salsa so as not to overwhelm the taste of the fish. Rs 825-plus
