What to expect: An a la carte menu comprising vegetarian and non-vegetarian Kashmiri delicacies. Choose from succulent kebabs, rich gravies and unique desserts. Looking for a full-fledged set meal? Go for the thali options in vegetarian and non-vegetarian.
Haaq Saag: Popeye would’ve approved of this one for sure. Collard greens, a fave from the valley, is tempered with garlic and spices to make a wholesome dish. Try this (Rs 975-plus) with the Girda, a wheat-based bread (Rs 250-plus)
Chef speak: “The menu is in a way my dedication to the flavours of Kashmir, which I got the chance to experience during my short stint in Srinagar,” said Guchhi sous chef Uttam Dey, the man behind the festival. Dey gained expertise in Kashmiri cuisine while working at The Lalit Grand Palace Srinagar and Hyatt Amritsar.
Tandoori Bharwan Guchhi: Hard-to-obtain morels from the Kashmir valley are stuffed with reduced milk, nuts and spices, enhanced by the smoky flavour of the tandoor. Rs 1,225-plus
Anjir and Akhrot Ki Shami Kebab: We’ve heard of figs and walnuts as additions to a dessert, but to have them in a compact patty as a starter? Thumbs up! Rs 875-plus
Waza Seekh Kebab: Hearty minced lamb skewers cooked with aromatic spices in a tandoor. Not too soft, not too spicy, we recommend this Kashmiri take on the seekh kebab. Rs 1,250-plus
Gustaba:Lamb meat is beaten on a stone till fine and then shaped into balls, which are boiled and cooked in a yogurt-based gravy (Rs 1,275-plus). Try this with the saffron-flavoured bread Sirmal. Rs 250-plus
Shufta: Fresh fruits cooked with dried fruits in caramelised sugar — this simple dessert is a winner. Rs 475-plus
