Ten nights of endless gastronomic feasts began at Flavours of India — a food festival at hotel Chanakya — on Friday.

Patrons visiting the festival would be able to experience different cuisines — Bengali, Rajasthani, Awadhi and north Indian — at the festival. They would have to shell out Rs 599 for an unlimited go at the buffet table for dinner, said Y. Singh Raghav, the deputy general manager of the hotel.

“The best part of the festival is that guests can have as much as they want. This is the first time we are serving Bengali and Rajasthani food,” he added.

The team of six chefs, led by Calcutta-based Swarup Roy, are the hands and heads behind the culinary extravagance. They have promised special treats every night. “We will change the dishes on the buffet every night,” he said.

Describing some of the dishes he plans to cook, the chef said: “We shall be serving some traditional Bengali dishes like rui maacher kalia (fish curry), kasha murgir mangsho (chicken curry) and kochi paathar jhol (mutton curry).”

He added: “Those who prefer Rajasthani food can enjoy lehsunia chicken tikka sholey or aloo dum.”
