Guwahati, Nov. 14: Welcome to my land — padharo mhare desh — is the welcome message for visitors to Rajasthan.

For the next nine days starting today, Rajasthani food and culture will be on display at Hotel Rajmahal, offering people a wide array of Rajasthani delicacies with a touch of its culture.

“The food festival — Rajasthani food festival — is on customer demand as there is a big Marwari community here,” Chanchal Banerjee, general manager of Hotel Rajmahal, told The Telegraph.

He said Rajasthani cuisine is a unique culinary tradition of the country and has developed a style of its own just like its rich art and crafts. The cuisine of Rajasthan is primarily vegetarian and offers a fabulous variety of mouth-watering dishes.

“We will offer authentic Rajasthani vegetarian dishes such as thandai, dal bati churma, panchmela dal, gatte ki sabji, gatte ki pulao, papad ki fali and many more mouth-watering dishes,” he said.

Of all the Rajasthani dishes, dal bati churma is perhaps the most popular.

During the festival, the restaurant will be decorated with rich art and textiles of Rajasthan and the waiters will be dressed up in Rajasthani attire.

“We hope to get a good response and will do our best to put up a good show,” Banerjee said.

He said a team from Rajasthan has been called in to work with their chefs to provide an authentic taste.

On future plans, he said the hotel would organise more such festivals to bring varieties of authentic food in the city.
