Chutneys, seemingly humble, burst with flavours and aroma. Be it the ubiquitous coriander chutney or the winter-must – grated radish chutney – adding a dollop on the side of the plate can change the whole mood of the meal. Here are a few quick and easy recipes that can elevate an otherwise bland meal or snack.

Radish chutney

This humble mulor chutney has the right amount of pungency, sourness and spice.

Ingredients:

  • Grated radish: 100gm
  • Finely chopped coriander leaves: 2 tablespoons
  • Finely chopped green chillies: 2 teaspoons
  • Finely chopped onion: 1 large
  • Lemon juice: 2-3 tablespoons
  • Chilli flakes: 1 teaspoon
  • Rock salt

Recipe:

  • Put all the ingredients together and mix well
  • Check seasoning and have with dal-roti, dal chawal or paratha

Tip:

  • Add salt right before serving the radish chutney. You can also add some chaat masala
  • It is not advisable to store this for more than three-four hours

Coriander chutney

The quintessential, lip-smacking winter (and all season) must to make, store, and have with every meal and snack.

Ingredients:

  • Coriander leaves: 100gm
  • Green chillies: 4-5
  • Lemon juice: 5-6 tablespoons
  • Salt
  • Sugar

Recipe:

  • Put coriander leaves, green chillies, salt and sugar in a blender and blend until smooth
  • Add lemon juice, check seasoning and blend for another 30-40 seconds, and the chutney is ready

Amla (amloki) chutney

A rich source of Vitamin C, keep making this khatta amla chutney till the fruit is in season.

Ingredients:

  • Grated amla: 10-15 pieces
  • Green chilli and lemon juice paste: 2 teaspoon
  • Finely chopped mint leaves: 1 teaspoon
  • Finely chopped coriander leaves: 2 teaspoons
  • Black salt
  • Sugar

Recipe:

  • Mix all the ingredients together and balance the seasoning as per liking and you have a chutney you would like to make again and again

Garlic chutney

Some soft paratha, a bowl full of piping hot dal, some aloo gobi with this spicy lasooni chutney — and winter breakfast, lunch and dinner are sorted.

Ingredients:

  • Roughly minced garlic: 3 tablespoons
  • Roasted whole red chilli paste: 1 tablespoon
  • Mint paste: 2 teaspoons
  • Green chilli paste: 1 teaspoon
  • Lemon juice: 4-6 tablespoons
  • Chaat masala
  • Salt
  • Sugar

Recipe:

  • Mix all the ingredients, except salt, since you are adding chaat masala
  • Check seasoning, balance the taste as per palette and voila!

Wood apple (kotbel) chutney

Ingredients:

  • Scooped and mashed wood apple: 1 piece
  • Finely chopped onion: 1 large
  • Finely chopped tomato: 1 medium
  • Finely chopped green chillies: 3-4
  • Finely chopped coriander leaves: 2 tablespoons
  • Salt
  • Sugar
  • Mustard oil

Recipe:

  • Mash the wood apple once again before mixing with other ingredients. Remove any seed or strand
  • Add the chopped vegetables, salt and sugar. Drizzle some mustard oil
  • Mix well, mashing the vegetables a little
  • Serve with an extra helping of mustard oil
