The melting pot called nyonya

Malaysia is a melting pot of Asian culture, says executive chef Sushanta Sengupta of The Wall. And the pot on his stove is proof of the medley of people, food habits and ways of life.

Nyonya cuisine, which is the highlight at The Wall for the next 10 days, developed in Malaysia with the advent of the Chinese. If the ingredients were from mainland China, the condiments were taken from the land they settled in. Memories and the new environment fashioned a new style of food.

Take a simple salad. In Nyonya cuisine, Rojak, the seasonal fruit and vegetable salad, would derive its flavours from spicy tamarind and palm sugar dressing — a result of the Arabic influence on Malaysia. A steamed fish would nestle in a broth of soya ginger, garnished with spring onions, fresh ginger and red chillies — a legacy of Chinese cuisine.

At The Wall, expect Nyonya staples like Mee Siam, a spicy and tangy noodle soup, or Sambal Udang (prawn in spiced sauce flavoured with chillies and lemon grass). “We have tried to stay as authentic as possible,” says Sengupta.

What: The Telegraph Cup Table Tennis 2014 for Corporates

Where: The Saturday Club

When: Between July 26 and August 2, 6pm-10pm

The second edition of The Telegraph Cup Table Tennis 2014 for Corporates will see 24 corporate houses crossing racquets.

Besides The Telegraph Cup (Gold Cup) and The Telegraph Plate (Silver Plate), there are prizes to be won in individual categories like Ladies Singles (mothers, daughters and wives of the participants can take part) and CXO Tournament (a participant has to be a chairman/director/CEO/COO/CFO/CIO/CMO/CHO). There would be exhibition matches too on the final day.

Organiser speak: “It should be a bigger success this time. A table tennis board is there in every office. Sports is a good stress-buster for corporates,” said Vishal Nayar, the sports convener at The Saturday Club. Suyash Borar, the chairman of the tournament’s organising committee, stressed that this is a one-of-a-kind tourney in “eastern India and perhaps in the country”. “This time we will also be giving away prizes to the Most Sporting Team, the Best Dressed Team and the Best Cheerleader Team,” added Borar.
