ICED TURMERIC LATTE

Golden milk is the current health rage across Europe, the US and Australia. Our immunity-boosting turmeric is topping the charts due to its cancer fighting compound Curcumin and its anti-inflammatory powers. The classic Indian haldi-doodh in a glammed-up avatar, to be enjoyed hot or cold!

Ingredients:

Milk of choice (skimmed/ almond/coconut) 
1 cup
Turmeric powder 
¾tsp 
Cinnamon, 
ground ½tsp 
Fresh ginger, 
ground ¼tsp
A pinch of black pepper, freshly ground
Honey 1tbsp
Vanilla essence 1tsp
Crushed ice 

Method:

Put a medium-sized saucepan over medium-high heat. Whisk together the milk, turmeric, cinnamon, ginger, and black pepper in the saucepan. Increase the heat to high, and bring the mixture to a boil, whisking frequently to keep the mixture from sticking to the bottom. When the turmeric latte/golden milk has reached boiling point, lower the heat to low, and keep it simmering for 2-3 minutes. Remove the pan from the heat, and whisk in the honey, along with the vanilla extract. Serve the turmeric milk immediately for a hot version, or cool it completely in the fridge and serve as a delicious iced latte over crushed ice in a tall glass. Sleep well with this snooze-time healthy concoction.

POPEYE’S CHOICE STUFFED CHICKEN BREASTS ITALIANO

Spinach is Popeye’s favourite and for a good reason too! Here we have succulent chicken breast stuffed with an Italian-inspired, healthy stuffing of spinach, tomatoes and cheese. A perfect no-carb dinner when you want something delicious and easy after a hectic day’s work.

Ingredients:

Chicken breast 1
Salt and pepper to season
Garlic cloves, minced 2-3
Dried oregano 1tsp
Tomato, sliced 1
Fresh spinach, roughly chopped ½ cup 
Mozzarella cheese, shredded  (swap with hung curd to make it low-calorie) 2tbsp
Olive oil 1tbsp

Method:

Heat a non-stick pan over medium flame. Carefully cut the chicken breast horizontally to create a pocket, being careful not to slice all the way through. Open the chicken breast and season the insides with salt, pepper and garlic. Then top with the spinach, tomato and mozzarella cheese. Sprinkle the dried oregano on top. Fold the top half of the chicken breast over to close the pockets. Thread a couple of toothpicks through the chicken breast near the openings to help secure it. Season the outside with salt and pepper.

Add olive oil to the pan. Add the stuffed chicken breast and sear on high heat for 4-5 minutes, or until well browned on both sides. Reduce the flame and cover with a lid. Cook covered, flipping it carefully in between, till the meat is moist and tender. Transfer the chicken to serving plates. Carefully remove and discard the toothpicks. Relish your protein-packed, healthy stuffed chicken breast with the extra goodness of leafy greens, made the Italian way!

 APPLE CINNAMON OVERNIGHT OATS

Super easy and convenient breakfast, it’s like a delicious apple pie in a healthier garb. Just pop it in the fridge and in the morning you’ll have a healthy, power-packed breakfast on the go!

Ingredients:

Apple, chopped 1
Oats two-third cup
Skimmed milk or Greek 
yogurt ¾ cup 
Raisins 1tbsp
Walnuts, chopped 1tbsp
Honey 1tbsp
Cinnamon powder one-eighth tsp

Method:

Layer the oats at the bottom of a mason jar. Place half the chopped apple on top. Pour milk/yogurt on top of it. Top with the remaining apple chunks, walnuts, raisins and sprinkle the cinnamon powder on top. Drizzle with honey and close the lid. Let it sit overnight in the fridge for the oats to soak in all the flavours. Pick up in the morning for an on-the-go power jar breakfast.

 DATE AND NUT ENERGY BOMBS

Bite-sized, no sugar and loaded with the healthy goodness of super foods like dates, nuts, seeds and coconut, these energy bombs are the perfect li’l bites during those hunger pangs.

Ingredients:

Dates, pitted 1 cup
Coconut oil, melted until warm 1tbsp
Almonds, chopped ½ cup
Mixed seeds (flax, chia, sunflower, pumpkin) ¼ cup 
Coconut, shredded ¼ cup

Method:

Place dates and coconut oil into a food processor and blend for 20 seconds. Scrape the sides of the processor and process again for an additional minute, until it is very smooth. Transfer the mixture into a medium-sized bowl and add all remaining ingredients. Stir with a spatula, until evenly combined. Lightly oil your palms and make walnut-sized balls of the mixture. Your healthy, sugar-free nutty energy bombs are ready.

 MEDITERRANEAN QUINOA LETTUCE CUPS

A medley of fresh veggies, herbs and heart-healthy garlic tossed with the super food grain quinoa, filled in crunchy fresh lettuce leaves... what’s not to love in this hearty and healthy lunch?!

Ingredients:

Quinoa (or broken wheat aka dalia) cooked ½ cup 
Cucumber, diced ½ cup
Tomatoes, chopped ½ cup
Fresh parsley, chopped 1tbs 
Green onion, sliced 1
Mint, fine chopped 1tbsp
Cumin, ground ½tsp
Garlic, minced ½ tsp
Juice of 1 lemon
Olive oil 1tbsp
Crumbled cottage cheese or boiled, shredded boneless chicken ¼ cup 
Salt and pepper to taste
Fresh lettuce leaves ¼ cup 

Method:

In a medium bowl, combine the quinoa, cucumber, tomatoes, parsley, onion, mint, cumin, garlic, salt, lemon juice and olive oil. Fold in the cottage cheese/chicken. Season with salt and pepper to taste. Chill in the refrigerator for 30 minutes. Spoon the quinoa salad into the fresh lettuce leaves and serve immediately.

 GREEN GODDESS DETOX SMOOTHIE

A wake-me-up morning detox smoothie with the goodness of pineapple that has fat-burning properties due to the presence of the enzyme bromelain, vitamin C and collagen boost of oranges and a pop of protein with spinach and flax seeds.

Ingredients:

Oranges, peeled 
and deseeded 2
Spinach leaves 2 cups
Flax seeds, ground 2 tbsp 
Pineapple chunks ½   cup 
Water ½   cup
 
Method:

Combine all ingredients in a blender and whizz until smooth. Your green detox smoothie is ready to drink!
