Chicken Tikka Roll

Ingredients

2 atta phulkas or whole wheat leavened bread, 2 egg whites, 2 tsp chopped coriander, 3 tsp oil, sliced onions and julienne of pepper to garnish

For filling

150 gm chicken tikka, cottage cheese (optional), 2 tbsp chopped onions, 2 tsp chopped coriander leaves, 2 tbsp ginger garlic paste, 1/4 cup chopped tomatoes, pinch of turmeric powder, salt and chilli powder to taste, 1 tsp chopped green chillies, oil to shallow fry

Method

Mix egg whites with coriander

Heat oil in a non-stick pan lDip each phulka into the egg white mix and place them on the pan one at a time till it turns golden brown

Keep it aside lRoast the chicken in an oven for maximum five minutes at 200°C lDice the chicken into small pieces

Fry the chicken pieces in refined oil with finely chopped onions, garlic and capsicum till it turns red

Heat the oil in a pan and add chopped onions, ginger garlic paste, chopped tomatoes, turmeric, red chilly powder and green chillies. Add the fried chicken tikka pieces, sliced onions, pepper and chopped coriander . Put the tikka mixture in each of the two-atta phulkas and roll them

Garnish with mint chutney and salad

 

Veg Dimsum

Ingredients

2 cups of flour, 1/2 tsp salt, 1/2 tsp baking powder

For filling

1 cup grated carrots, 1 cup grated cabbage, 1 tbsp oil, 1/2 cup chopped onions
1 tsp chopped garlic, 1 tsp soya sauce, salt, 1/4 tsp vinegar, and 1/4 tsp black pepper

Method

Mix the flour with salt and baking powder and knead to make stiff dough with butter
Heat oil in pan and add onion and garlic
Sauté by increasing the flame
Then add carrot and cabbage and fry again
Toss the mix in the pan till the excess oil starts coming out
Remove it from stove and then mix it with soya sauce, salt, vinegar and black pepper
Roll the dough and cut into pieces
Make small pieces out of the dough
Create a hollow base in it and put some filling in inside it
Make the edges wet and bring them close to cover the filling
Twist to seal and fill the rest of the pieces in the same way
Steam for about 10 minutes and serve with soya sauce and chilli sauce
In case you want to have fried momos, then fry the dough in hot refined oil
