Sweta Ganeriwala’s Kolkata label The Petite Cookhouse makes elegant Mexican Coffee Buns that are eggless. “They’re pillowy in texture and comprise of a crisp coffee crust outside and the goodness of butter inside,” Ganeriwala tells us.
Funnily enough, Mexican coffee buns were popularised in Malaysia, specifically by a Malaysian bakery called Rotiboy. In fact, in certain parts of Asia, this number is still known as a Rotiboy. Serve it hot and pair it with a glass of cold chocolate.
