Making dinner a rich affair this June, Dum Pukht, known for its slow-cooking, is plating up a qorma-special menu to celebrate the cooking style that uses a brown onion-based gravy. With recipes culled from the royal kitchens of Awadh, Qorma Qissa offers five vegetarian and five non-vegetarian qorma dishes, jointly created by Zubair Quereshi, master chef, Dum Pukht, and Vijay Malhotra, ITC Sonar executive chef. Here’s what we loved. 

What: Qorma Qissa
Where: Dum Pukht, ITC Sonar
When: Fridays, Saturdays and Sundays in June
Timings: 7pm to 11.45pm

That dish which looks like anda curry is actually Paneer Nargisi Qorma! The koftas, made of paneer and dry fruits, float in a saffron-flavoured creamy gravy. 
Rs 1,200-plus
Pair with: Khamiri Roti, or Khushka Pulao.
Mushrooms get a spicy makeover with the Dhingiri Hara Piyaz Ka Qorma, where button mushrooms are cooked with spring onions in a spicy gravy. It will leave you licking your fingers.
