The participants were briefed by chef Manu Chandra (fourth from right) who walked around to each one, giving pointers on how to make the best use of their ingredients. “The idea is to create a combination of flavours that you would want to eat when you visit a restaurant. Much of sushi is a modern innovation, and it’s good to demystify the whole idea of sushi being a traditional idea,” said Chandra, the man behind restaurants such as Toast & Tonic, The Fatty Bao, Monkey Bar and Olive Beach.

On Friday evening, The Fatty Bao got together six city-based fashion enthusiasts for a make-your-own sushi session overseen by Manu Chandra, partner, The Fatty Bao (the Olive Group of Restaurants) along with Prashanth Puttaswamy, executive chef, The Fatty Bao. A table of the choicest sushi ingredients was laid out, along with a designated section for each guest to create and roll their sushi.

The session showcased three different types of sushi, and in the end the participants got to name the fave among their creations. Each of these chosen dishes will be a part of the week-long menu commencing today, the International Sushi Day.

“This is our attempt to make sushi more approachable so that everyone can give the dish a try. Keeping this in mind, the sushi that we demonstrated were simple and easy to make,” said chef Puttaswamy.
