Glimpses from a sit-down French dinner to mark Gout De France festival

Hyatt Regency Kolkata

Novotel Kolkata

Eight star addresses across town raised a toast to French gastronomy on March 21. While French consul-general Damien Syed was busy at Hyatt Regency, Fabrice Plançon, director of Alliance Francaise du Bengale, chose to sample the dinner at Novotel Kolkata.

Executive chef Neelabh Sahay helped Fabrice Plançon choose from the menu at Novotel. Also at the table is Thai consul Montakan Hengsuwan. (Above) Red wine paired with a white cheese dish. The Novotel menu will be served at dinner till March 25.

Swissotel Kolkata

Celebration of all things French is the buzz at this Rajarhat hotel’s Cafe Swiss. In keeping with the spirit of Good France 2018, a culinary celebration of French food celebrated all over the world, the hotel will plate a specially-curated a la carte French menu till March 27. Here’s what t2 relished.

What: Gout de France 2018

Timings: 12.30pm to 11.30pm

Pocket pinch: Rs 2,100 for two

Fois gras Poele: Fois gras or fattened duck liver served with a compote made of fresh figs and pickled vegetables. Garnished with crispy brioche and pickled vegetables, the softness will leave you wanting more.
Tarte au Chocolat: The winner of the afternoon was the hazelnut gianduja chocolate tart, which was served with chocolate crumble along with a tangy passion fruit sorbet to offset the sweetness of the chocolate.
Confit de Poulet: Chicken legs slow-cooked over 24 hours to attain a tender-on-the-inside-and-crisp-on- the-outside feel. Served with white bean stew, celeriac puree and truffle shreds, the crisp and creamy balance was on point.

What to expect: Check out typical French delicacies such as Asparagus with Shaved Black Summer Truffle and Hollandaise, Grilled Bay of Bengal Prawns with citrus-sundried tomato pesto and rice crisp, Roast Chicken with New Potatoes, Baby Carrots and Merlot Jus, and desserts such as Vanilla Creme Brulee with Croquets de Carcassonne, and Chocolate Marquis with sour cherries.
