There are a load of fun fruity recipes that you can try this summer without any sweat. While some fruits like mango or lychee are great by themselves, others are great in jams, preserves, tarts or simply grilled. Fruit cooked on the grill with just olive oil and a sauce drizzled over it is delicious. Firm fruits like apples, pears and pineapple are easy to grill. Most fruits like pineapples, peaches, plums, apples and pears are best when cut in half , pitted, cored and grilled. It is best to place large pieces of fruit directly on the grill. Baste them lightly with fruit juices, melted butter or a marinade ? it prevents them from sticking. When you use olive oil, ensure that the flavour of the oil does not overpower the fruit. For a quick and simple sauce, make a pur?e of the fruit you’ve grilled, add a little lemon juice, season and drizzle over the fruit after grilling. An even simpler approach is to sprinkle the fruit with some brown sugar, cinnamon or ginger.

Ingredients: 6 large apples; 1/4 cup butter; 1 cup brown sugar; 1/4 tsp ground cinnamon; 1/4 cup whisky; 6 tbs fresh cream
Method: Combine the first four ingredients in a sauce pan and boil for 2 minutes. Remove from heat, stir in the cream. Brush a bit of the sauce over the apples in the last two minutes of grilling. Serve the apples hot and drizzle the rest of the sauce over them.
