(L-R) Chef de cuisine Swarup Chatterjee and sous chef Soumyajit Chowdhury prep for a dish at the culinary demonstration, which marked the beginning of the festivities at Afraa Deli in City Centre Salt Lake.
This Rainbow Fettuccini Aglio E Olio gets its vibrant colour from crushed blueberries and beetroot paste, neither of which dominate the dish. The simple flavours mean the fresh pasta can really be appreciated.

Afraa Deli at City Centre Salt Lake turned 10 on July 17 and celebrated with #CoversationsAndMore, in association with t2 — a number of events over 10 days, the first of which was a cooking workshop on July 13.

The Mango Hummus was a firm favourite among the crowd as a unique twist on a classic condiment. Fresh mango puree — a seasonal hit — was mixed with chick peas for a soft mango flavour, before being garnished with diced mango. It’s creamy and just a little sweet, a must-try for hummus lovers.

This was an opportunity to showcase their menu and for diners to see how their food is transformed from basic ingredients to the finished dish on their plates, as well as to find out how they could recreate some of their favourites at home. The dishes showcased, which will soon find place in the new Afraa menu, share a focus on healthy food.

This Fennel, Rocket, Iceberg Lettuce, Orange and Almond Salad combined sweet and sharp flavours for a refreshing kick. Drizzled with olive oil and lemon juice, this is good as a light starter or a side.

“Afraa Deli evolved to become the varied restaurant it is today, transitioning from a menu that included just pasta, pizza and salads to one which features our ever-popular breakfast items, rolls and sandwiches. The menu still includes the popular picks that have been served at Afraa for 10 years. We want more salads, more pastas and have come up with some that are different,” said Sumanta Chakrabarti, corporate chef, Ambuja Neotia Hospitality.

The Chicken Maultaschen with Pea and Shiitake is a kind of German pasta similar to ravioli. It’s a delicious savoury treat, served in an egg drop broth.

Some of these dishes were demonstrated to eager onlookers by chefs from Ambuja Neotia Hospitality —  Ghanashyam Das, Sumit Kediya, Sanjay Jha, Swarup Chatterjee, Soumyajit Chowdhury, Manoj Das, Abhijit Dey, Souvik Basak and Sayantan Sinha.
