Cauliflower touch to kheer

Patna, March 23: Recipient of several awards Sanjeev Kumar has been making hay with his cauliflower kheer item at a stall at the Bihar Divas food court at Gandhi Maidan.

Visitors have been queuing up to taste this unusual delicacy, which was presented for the first time to chief minister Nitish Kumar in January last year at Chakbara in Vaishali district, which has seen widespread production of high yield cauliflower seeds.

On his special dish, Sanjeev said: “When cauliflowers were sold at less price, I thought of utilising it for a different purpose. A few days prior to the chief minister’s visit to the village, I thought what could I serve him. Many were thinking of making kheer from makhana, mushroom and rice and I decided to try making cauliflower kheer.”

Once the chief minister liked his item, he started to sell it in his village.

“I have come to Bihar Divas with this item and the people are liking it. Yesterday, within a few hours I did a business of Rs 1,800,” Sanjeev said. Each bowl is priced at Rs 10

Navin Singh, a resident of Patliputra, who tasted the kheer, said: “It is yummy. I have been eating kheer made from rice but could not think that cauliflowers could be used to make desserts.”

On the recipe, Sanjeev said: “It is very easy to prepare this kheer. First, grated cauliflower is boiled in hot water. Once the water is drained out, hot milk and sugar is mixed to it. Dry fruits like almonds, raisins, peanuts, cashews and cardamoms can be added for a better taste.”
