Vedic at The Westin Kolkata Rajarhat is known for its contemporary approach to classic Indian regional cuisine, presented in an abstract form. The restaurant has recently curated a new set of winter menus designed to offer a culinary experience that captures the unique essence of the winter season.
The specialty restaurant will showcase three menus from the winter collection: Himam, Hemanta, and Sishir, each encapsulating the essence of the season's freshest ingredients. Employing a slow-cooking technique, these menus feature delights such as Makhanphalam, comprising handpicked avocado, raw mango chutney, ragi mathri, and more, as well as Japapushpa, which includes fresh hibiscus flower-infused rasam, Achappam, spicy saunth chutney, and beetroot dust.
These menus also present classics like Puran Poli, Dal Vedic, and Black Rice Khichda, adding a touch of culinary artistry to the winter dining experience.
