Any food lover will (rightly) tell you that relishing a firni in an earthen pot is the way all Mughlai meals must end. Now, what if we told you that this indulgent rice-and-milk pudding could be even better? The Mughlai classic dessert is made by cooking finely ground long-grain basmati rice with sugar in full cream milk until lush and creamy. The concoction is set into a pudding in earthen pots and topped with chopped nuts for an added crunch. This festive season though, Aminia is upping the ante for this signature dish with the Shahi Firni. It’s creamier than usual, with a smoother mouthfeel, and still has the distinct fragrance of cardamom and saffron. Adding that little extra oomph are the floral notes of kewra attar. This royal dessert is available at the restaurant’s Rajarhat and Golpark outlets.
