The Astor Hotel’s Kebab-e-que is hosting an Awadhi food festival which features some authentic Awadhi flavours and some elaborate numbers. One of the major show-stoppers? The Parda Biryani! The delicious biryani is usually made by layering cooked rice with cooked meat and steam covering it in a sheet of dough. The Awadhi number is a classic example of a dum biryani and was originally cooked on stovetops.
