Sunday Classics: Victoria Sponge Cake at Fire and Ice

It was imperative to have something sweet to accompany the freshly-brewed tea at Queen Victoria’s tea parties. This led to the invention of the Victoria sponge. This classic yet exceeding simple delight was a vanilla cake layered with buttercream and jam. While earlier cakes were leavened with eggs, the Victorian age saw the invention of baking powder which led to the glorious renaming of the dessert to pay homage to the Queen’s favourite cake.
Fire and Ice, the pizzeria off Russell Street, recreates this teatime classic to the T(ea). The soft and fluffy cake complements the rich buttercream sandwiched within. The tart jam makes sure that every bite is just as decadent as the last. Travel back in time with this delicious dessert – it works just as well after lunch!
