Sunday Classics: Pork Chop in Mushroom Sauce from Trincas
A holiday roast with a dash of drama

Craving a Christmas roast? Trincas has got you covered. The heritage eatery has just introduced a rather Christmassy addition to their menu. Their Pork Chops in Mushroom Sauce is a festive delight. Marinated in herbs like thyme and rosemary, the chops are given a salt and pepper rub. The meat is cooked in the oven and finished off on the grill, which keeps it moist for long and also infuses it with a smoky flavour.
The mushroom pepper sauce is made with the base pork stock, which is further cooked with onions, carrots, celery and aromatics like ginger and garlic. It's then thickened with a roux and cooked slowly for over two hours. The chops are accompanied by sautéed mushrooms, the sauce and a side of veggies and potatoes. A final sprinkle of freshly cracked pepper adds to the heat and drama.
