Sunday Classics: Fish Kabiraji from Mitra Cafe

An age-old deep-fried savoury delight

There’s no doubt that Kolkatans love their deep-fried snacks as much as they love their sweets. In the selection of delectable fried goodies, the crunchy kabiraji emerges on top almost every time. And the fish kabiraji from the century-old Mitra Cafe has a fond place of its own. Founded in 1920, they have six outlets all over Kolkata and their fish kabiraji is an absolute must-try at them all. 

This iconic dish is a Bengali fish fry with a shot in the arm in the form of an additional light and crackling coating. Once the bhetki is marinated in spices, crumb coated and fried, an airy egg batter is spun on to hot oil and the fish fry then placed on the crunchy, golden egg net before being wrapped in it like a pretty parcel. Sound, sight and taste all come together beautifully when feasting on this fish dish. Once you cut into the kabiraji, the crispy exterior reveals flaky, perfectly cooked fish and with every bite the unique texture of this dish gets better and better. 

Pair it with fresh onions on the side and some kasundi for the best evening snack.
