Pancakes made of potatoes? What’s not to like?

Hash browns may have their days, but the Swiss potato rosti is the ultimate breakfast indulgence. Not only is it more wholesome but it’s also more versatile as comfort food, and can be paired with both meat and veggies. Rosti was conceived as a farmer’s lunch (after potatoes arrived in Europe between the 15th and 17th centuries). There’s no master recipe as such, a grated pile of fried potatoes was all that there was to this rustic number. However, the dish has been updated in various kitchens across the world.
The most popular version of the rosti resembles Jewish-style Latkes (pan-fried potato pancakes) but rostis are a lot easier to make since they don’t need eggs or any other binding ingredient. A handful of Kolkata eateries are warming up to niche European recipes and Bhowanipore’s Artsy is one of them. Artsy’s classic, crispy golden rosti is topped with sour cream and a scoop of freshly made guacamole which elevates the flavour profile.
