Latika Dhawan’s Kaaram started out as a humble cloud kitchen in 2020, and has transitioned into a dining experience dedicated to recreating the flavours of Andhra Pradesh in Kolkata. Their Prawn Vedupu is a fried seafood entree that has all the best Andhra flavours. The prawns are slow-cooked and fried with peppers, sour tamarind and sweet coconut, and garnished with crunchy green onions.
“My journey with the cuisine began when I moved to Visakhapatnam in 1982. As I started developing a taste for these flavours I started exploring authentic Andhra meals and before I knew it, I bonded with this cuisine quite intensely. Though I am a North Indian, brought up in Kolkata, my food habits have been leaning towards South Indian flavours. I was missing the food when I came back to Kolkata 15 years ago. Kaaram is an outcome of my love for this cuisine,” shared Dhawan.
