Anjan Chatterjee’s royalty-inspired fine diner Riyasat serves food straight out of erstwhile shahi bawarchi khanas. The restaurant opened its doors in 2019 and made waves with its menu that offers authentic recipes from Indian royal kitchens. So you’ll actually spot Bahadur Shah Zafar’s Balu Sahi Balai Tukda and some delicacies from the Rajwada gharana of Mewar. One of their prized creations is the house special Laal Maas Mathaniya, which chef Surjan Singh Jolly perfected under the tutelage of HH Shreeji, Mewar. The entree features braised lamb shanks cooked in a rich, scarlet gravy, and served with the distinct Mathaniya mirch relish. 

Junglee Maas and Laal Maas both originated in the royal kitchen of the Mewars, but the famed Laal Maas is definitely more celebratory in spirit. Pair it with a Lucknowi Warqi paratha or a traditional naan.
