Decades of chilli pork has set up our taste buds perfectly for Kancha Lanka Pork. Hot sauce, check. Green chillies, check. (Besides, these have been de-seeded, so you’ll get the flavour but your ears won’t burn.) Bengali spices, check. A dash of Gondhoraj lemon juice brings the flavours together for this wok-tossed meat dish. You’d be surprised at how well pork takes to the Bengali flavour palate.
The Big Byang specialises in pork dishes with a twist. You might also want to try the Kancha Aam Pork, where the tangy flavour of raw mango cuts through the dish. On the other hand, Niramish Pork (an oxymoron if there ever was one), is one of the lighter ones since it’s made without onion and garlic. Regardless of the dish, what the menu promises you is the flavour of Bengal.
