Brownies with ice cream can wait as we explore some seriously experimental desserts this week. Modern Indian diner Jalsa has the most ambitious dessert menu in town and we can’t have enough of their deconstructed picks that line up some of the more nuanced flavours.
Jalsa’s chef’s special Kaali Jalebi Caviar is a delicate curation made with Jalebi pearls, activated charcoal and saffron espuma. The number offers some familiar flavour notes but in a revamped format that definitely elevates the culinary experience. Pair it with a Jalsa Negroni (gin, sweet vermouth, truffle oil, orange bitters) or a Kashmiri Kahwa Sangria (white wine, Kashmiri spices and diced fruits).
