Kolkata-based cloud-kitchen Citron Patisserie offers a French Opera cake that pulls out all the stops. It’s chock-full of goodness — made with almond flour, espresso and chocolate ganache. “It is a layered cake and very dense. But it’s the layers that make it what it is. We first soak the cake in espresso and then top it with coffee buttercream and chocolate ganache,” says Radhika Chatterjee, the Le Cordon Bleu graduate who co-owns the label.
Radhika Chatterjee and Srishti Seal spearhead the bake-from-home brand, serving a mix of sweets and savouries, all with their roots in France. “A few items on our patisserie’s menu are very traditional and some of them are more modern. We have a few items that are not French but most of our items are French-inspired,” says Srishti Seal, who graduated from the Academy of Pastry and Culinary Arts in Bangalore.
