The fiery Ema Datshi (‘ema’ means chili and ‘datshi’ means cheese in Dzongkha) packs a lot of spice and the perfect vehicle for its sharp flavours would be the soft, warm bao. Momo I Am has worked out the math and the brand’s consultant chef and Masterchef India contestant Mahendra Thulung has created the Datshi Bao. The fluffy bao bun is steamed to perfection and stuffed with chicken cooked in classic Bhutanese flavours. There are hints of garlic and dry red chillies which sing in every bite. The chicken is marinated and grilled which makes it juicier. Finally the bao is topped with fresh veggies like bok choy, lettuce, peppers and the most anticipated cheese sauce. The cheese and chillies complement each other perfectly making each bite better than the last.
