What would make the soft and savoury dhokla even better? Vibrant colours, of course. Kolkata catering label Paprika Gourmet has introduced a tri-colour dhokla, just for Holi and something tells us this snack is going to be a hit. The spinach juice gives the batter its vibrant green shade, the beetroot juice brings in the red and the turmeric juice adds the golden yellow colour.

The mustard seeds and curry leaves unlock the familiar savouriness of the dhokla, while the shredded coconut adds a hint of sweetness to the dish. It is perfect for sharing and a nutritious snack for kids. Adults can enjoy the dish with a bite of chilli and maybe some tangy chutney. Available till March 20.
