Indulge in a creamy Burrata at Fabbrica

When at Fabbrica, you can’t help but melt at the sight and scent of cheese. While a Neapolitan pizza or a parmesan-topped pasta is a favourite anyday, a turophile will tell you that cheese is best enjoyed on its own. That brings us to Fabbrica’s little bundles of cheese-filled joy called burrata. The creation originated in the small Italian town of Puglia, and is made by stuffing stracciatella (a mix of mozzarella strings and cream) into a pouch of fresh mozzarella-like cheese. The result—a lush, creamy centre encased in a stringy, slightly firm case—is simply divine. At Fabbrica,the burrata is served with a herby pesto, cherry tomatoes, aged balsamic, extra virgin olive oil and perfectly grilled sourdough to carry all the flavors through.
