Mutton lovers, this Liver Kosha recipe needs your attention

Craving for mutton on a long tiring day ends up in two ways – a) ordering some or b) letting it pass. But, there’s a third one is cooking some and in the simplest possible one-pot way. Know how…

Ingredients:

  • Mutton liver: 500gm
  • Onion paste: 2 tablespoons
  • Ginger paste: ½ tablespoon
  • Garlic paste: ½ tablespoon
  • Slit green chillies: 3-4
  • Cumin, coriander, red chilli, kashmiri red chilli, black pepper powders: 1 tablespoon each
  • Salt: To taste
  • Sugar: To taste
  • Lemon juice: 2 tablespoons
  • Mustard oil: 3 tablespoons
  • Bay leaf: 1
  • Dry whole red chilli: 1
  • Garam masala powder: 1 and ½ teaspoon
  • Ghee: 1 tablespoon

Recipe:

  • Add mustard oil in a pressure cooker and heat well
  • Add bay leaf, whole dry red chillies and saute well
  • Add onion paste and saute for 3-4 minutes on medium flame, add ginger and garlic paste and saute 3-4 minutes
  • Add dry masalas, sprinkle some water and mix well. Saute for another 4-5 minutes
  • Add the mutton liver and green chillies, along with the lemon juice. Add salt and sugar and mix well. Saute for 5-6 minutes on medium flame
  • Add warm water as per requirement, adjust seasoning and close the lid. Cook for 20 minutes on low flame, and wait till 2 whistles
  • Uncover, check seasoning, add garam masala powder, boil on full flame for 1 minute, sprinkle ghee and enjoy with piping hot rice
