Craving for mutton on a long tiring day ends up in two ways – a) ordering some or b) letting it pass. But, there’s a third one is cooking some and in the simplest possible one-pot way. Know how…
Ingredients:
Mutton liver: 500gm
Onion paste: 2 tablespoons
Ginger paste: ½ tablespoon
Garlic paste: ½ tablespoon
Slit green chillies: 3-4
Cumin, coriander, red chilli, kashmiri red chilli, black pepper powders: 1 tablespoon each
Salt: To taste
Sugar: To taste
Lemon juice: 2 tablespoons
Mustard oil: 3 tablespoons
Bay leaf: 1
Dry whole red chilli: 1
Garam masala powder: 1 and ½ teaspoon
Ghee: 1 tablespoon
Recipe:
Add mustard oil in a pressure cooker and heat well
Add bay leaf, whole dry red chillies and saute well
Add onion paste and saute for 3-4 minutes on medium flame, add ginger and garlic paste and saute 3-4 minutes
Add dry masalas, sprinkle some water and mix well. Saute for another 4-5 minutes
Add the mutton liver and green chillies, along with the lemon juice. Add salt and sugar and mix well. Saute for 5-6 minutes on medium flame
Add warm water as per requirement, adjust seasoning and close the lid. Cook for 20 minutes on low flame, and wait till 2 whistles
Uncover, check seasoning, add garam masala powder, boil on full flame for 1 minute, sprinkle ghee and enjoy with piping hot rice
