Chrissy Teigen’s banana bread beignets

French pastry weekends are the best…

There’s no bad time to have sweet, fried dough pastry and Chrissy Teigen’s fluffy banana bread beignets are the quickest French desserts you can make. They are fluffy, moist and bite-sized and feature a special three-ingredient dusting. 

Ingredients:

2 cups flour
½ cup sugar
¼ cup light brown sugar
1 tablespoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 ½ teaspoon fine sea salt
1 egg
2 large very ripe bananas, mashed (1 cup mashed)
½ cup chopped toasted walnuts
½ cup milk
1 tablespoon vanilla extract
3 tablespoons vegetable oil, plus more for frying and oiling spoons 

For Dusting:

½ cup confectioners’ sugar
½ teaspoon ground cinnamon
A pinch of flaky sea salt
 

Method:

  • Combine the flour, sugar, brown sugar, baking powder, cinnamon, and nutmeg in a large bowl.
  • Whisk the egg, banana, walnuts, milk, vanilla, and 3 tablespoons of oil until smooth. Gently fold the wet mixture into the dry, mixing until just combined; mixture will be thick!
  • Heat 3–4 inches of oil in a large pot, such as a wok, braiser, or Dutch oven, to 360°F. Oil is ready when a candy thermometer reads 360°F or a small piece of dough or bread sizzles and begins to turn golden upon contact. Dip a small cookie scoop or two large spoons in oil to measure out 2 tablespoons of batter at a time and gently drop into the oil. Fry 4 or 5 beignets at a time until golden, 2–3 minutes per side; beignets will be quite dark brown. Drain on paper towels or a rack set over a sheet pan.
  • Combine the confectioner's sugar and cinnamon and dust over the beignets, then sprinkle with flaky salt, before serving.
