Zen at The Park is giving Calcutta a taste of a popular street food from China — Cheung Fan. A Cantonese speciality, Cheung Fan is typically a thin roll made of rice flour that is steamed and then stuffed with meat or vegetables and served with a sauce.
“Cheung Fan is mostly eaten as a snack or a small meal in South-East Asian countries. You may call it a cousin of the dim sum, and it is definitely a healthy snack since most of it is steamed. Our Cheung Fan festival will have six to eight pieces per platter,” said Mohan Singh, senior sous chef, Zen, The Park.

Asparagus and Cheese Panko Fried Cheung Fan with Japanese Hot Tonkatsu Sauce: A Japanese twist to the Cantonese recipe, this one’s stuffed with cheese and asparagus, coated with panko and then deep-fried. The sweet-and-sour sauce is a contrast to the cheese. Rs 545-plus
Smokey Beef and Water Chestnut Cheung Fan with Thai Basil Sauce: Chunks of smoked beef, chopped water chestnuts, chilli paste and a special soy-based sauce make up this flavourful bite.

Classic Chicken and Fried Garlic Cheung Fan with Classic Cheung Fan Sauce: The classic sauce is a mix of light soy sauce, sugar and sesame oil. This is topped on a Cheung Fan stuffed with simple boiled chicken. You’ll love the freshness in each bite. Rs 745-plus
Vanilla Ice Cream and Cashew Nuts Cheung Fan: Vanilla ice cream is stuffed into the rice roll, which is then drizzled with a salted caramel sauce and garnished with caramel-coated cashews with a hint of chilli on them.
