This seafood dish is exotic, as the imported giant clams are far larger than those sourced locally. Boiled in a ginger and garlic sauce thickened by cream and yoghurt, this dish is fresh and salty. Chef and co-owner Avijit Saha, the man behind the new menu, adds that guests can add butter and green chilli if they want to get the “chatpata taste”. Rs 450-plus

Famous for its tribal delicacies, particularly the Bashpora Mutton — spicy mutton cooked inside a piece of bamboo — Santa’s Fantasea in Salt Lake has expanded its menu to include a few international flavours. The 1,200sq ft eatery has launched a new menu that has dishes comprising Pacific Ocean clams and New Zealand Pure Brand Lamb —
grass-fed lamb reared using free range farming methods.
“By introducing the new menu, we want to serve our regular guests and attract anyone wanting wide choice and authentic meals. Our unique methods and highly aromatic flavours will make you come back for more,” said Partho Ghosh, co-owner.

Rack of Lamb
This plate is a feast for meat lovers. The two rib pieces of lamb are soft and bursting with flavours, after being marinated for 12-14 hours in a paste of red pepper, onion, ginger, garlic and mustard. The boiled assortment of peas, shaved carrots, peppers and broccoli are a treat, cooked al dente and oozing with garlic from the sauce. Rs 480-plus

Pineapple Lamb Salan
This mix of fruit and red meat is unusual but exquisite! The soft pineapple pieces compliment the tender lamb, creating a succulent texture. The gravy is made of onion, pineapple, star anise, cinnamon and garlic. The meat is boiled in pineapple juice and served with Gobindoghog rice. Rs 450-plus

Lamb Charsi
If you like a hot dish, this one is for you. Boneless lamb loin pieces are marinated in a sauce of peppers, onions, ginger, fresh honey and spring onions.Topped with chopped garlic and red chillies, it is super spicy with a hint of sweetness. Choose a side of rice and boiled vegetables to maximise the flavour. Rs 450-plus
