The Northeast is a plethora of complex flavours that are seldom explored in mainstream media. Instagram food account @by_bornbhukkad_1994 is changing this with their recipe of Tohan Mosdeng, a rustic and spicy chicken delight from Tripura.
Apart from raw chicken, this dish requires chopped ginger, onions, salt, coriander, and a lot of chillies. The meat, ginger and some chillies are boiled till it is tender, after which some more chillies are roasted and grinded with some ginger and salt. This chilli garlic paste is mixed with the boiled chicken and onions, creating a delicious accompaniment to both rice and roti.
