New Market Pork Sausages In Nolen Gur Caramelised Onion Sauce

Ingredients:

•Pork sausages: 10
• Refined oil: 15ml
• Butter: 10g
• Finely chopped garlic: 2tbsp
• Thick onion roundels: 2
• Nolen gur: 30ml
•Salt to taste
• Crushed peppercorn to taste
• Finely chopped parsley to garnish

Method:

1. Prick the sausages and saute. Cut into half or three pieces each.
2. Heat oil, add garlic, onion roundels and sausages one by one.
3. Keep sauteeing, once the onions are caramelised add the nolen gur.
4. Adjust seasoning, sprinkle crushed peppercorns. Add butter for additional glaze.
5. Finish with finely chopped parsley.

Nolen Gur Salsa Glazed Grilled Chicken Drumsticks

Ingredients:

• Chicken drumsticks: 4
• Butter to bast

For marination:
• White wine: 60ml
• Mustard powder: 1tbsp
• Seasoning to taste
• Finely chopped garlic: 2tbsp

For Nolen Gur Salsa:
• Nolen gur: 25ml
• Finely chopped garlic: 1tbsp
•Finely chopped green chillies: 2tsp
• Finely chopped onion: 2tsp
• Finely chopped onion: 2tsp
• Rock salt to taste

Method:

Khatta Meetha Cocktail Sheekh Kebabs

Ingredients:

• Minced mutton: 200g
• Raw papaya: 100g
•Ginger garlic paste: 2tbsp
• Finely chopped onion: 2tbsp
• Finely chopped green chillies: 2tsp
• Finely chopped coriander: 2tsp
• Grated nolen gur patali: 3tbsp
• Tamarind pulp to taste
• Tandoori masala: 2tsp
• Crushed peppercorn: 1tsp
• Rock salt to taste
• Wooden sticks to bind
• Butter to bast
• Nolen gur to glaze

Method:

1. Mix raw papaya juice with minced mutton and keep aside for at least
2 hours.
2. Now mix all the other ingredients with the minced mutton and keep marinated at least for 3 to 4 hours.
3. Bind the minced meat with wooden sticks and shape like kebabs.
4. Grill on griddle or open fire, basting with butter.
5. Glaze little nolen gur.
6. Serve hot with salad .

Pork Chop in Peppery Nolen Gur BarBecue Sauce

Ingredients:
• Pork chops: 2 (approx 250g to 300g)

To Marinate:
• Finely chopped garlic: 2tbsp
• Mustard powder: 2tsp
• Seasoning as required
• Worcestershire Sauce: 1tsp
• Butter or olive oil to grill Sauce:
• Proprietary barbecue sauce: 50ml
• Olive oil: 15ml
• Finely chopped garlic: 2tsp
• Finely chopped onion: 3tbsp
• Butter: A bit
• Nolen gur: 10ml
• Old Monk rum: 15ml
• Crushed peppercorn: 2tsp
• Finely chopped coriander to finish
