Sip and bite

From Naples to Calcutta... there’s no such thing as too much pizza!

There’s a new place in town to satisfy those post-work or weekend or all-the-time pizza cravings. And this time it’s a factory of pizzas, if the name is to be taken literally!

The owners of Fabbrica Della Pizza are four youngsters — Naman Dhandhania, Raghav Kapur, Rohan Ireland and Chitra Saini — straight out of college, with one thing in common: the love of the Neapolitan pizza.

“These aren’t your usual thin-crust pizzas. The Neapolitan pizza has a thicker, crustier edge and its best had folded. In Italy they serve it as a whole pie but here we serve it sliced because that’s how people prefer it,” said Naman, also the co-proprietor of Alla Bella Mozzarella. “Raghav and I have learnt to be more proactive than reactive in this business,” he added.

You’re allowed to customise your pizzas at the live counter at this pizza place for 45 hungry souls. Just tick off the sauce, cheese and toppings that you like best, though the proprietors are of the opinion that too many toppings ruin a good pizza pie. #GreedAlert

t2 sat down to its first Neapolitan pizza, off Elgin Road, and found it to be a neat blend of the thick pizzas we grew up with and the thin-crust pizzas that are all the rage now.

What: Fabbrica Della Pizza
Where: 8A Allenby Road, near Forum mall
When: Noon to 11pm
Meal for two: Rs 800-plus

Stepping into Fabbrica Della Pizza is stepping through the doors of Narnia into the cobbled streets of Italy. Or a very good impersonation of it. t2’s favourite corner was the wall with the blue door which, one imagines, opens right into Naples.

The Tiramisu Shake is for coffee lovers. It’s not quite your regular cold coffee. The mascarpone cream makes it thicker and crushed Ladyfinger biscuits add a certain texture. The Fab Limonata is very refreshing with the orange and lemon juice infused with the unmistakable taste of basil. The honey-dipped strawberries can be scooped out once you’re done with the drink. Rs 260 & Rs 160

Budino, the Italian word for custard or pudding, is a three-layered affair where the caramel layer is sandwiched between dark chocolate and vanilla coffee cream. Trying to fit in all the layers into a single spoonful is the fun part! Rs 150

Gamberetti. This one is delicately flavoured with garlic shrimp, parsley and lime juice. It’s like having a light Continental dish on a pizza base. Press a finger down in the middle of the puffy crust and fold the pizza slices down the middle. It’s the only way to have a Neapolitan pizza! Rs 500

Fab Fungo. While mushroom pate and fontina cheese form the base, button and shiitake mushroom are the crown. But the jewel would be the drizzle of truffle oil. Yes, there’s no mistaking the unmissable flavour of love. Rs 600

Piazza. The mozzarella and goat cheese make you want to sink your teeth into this. The pomodoro and sun-dried tomato give it a very strong tangy flavour. And the dollop of pesto adds the spice. Since the flavours are strong, this is the pizza to have last. Rs 420

The Italian Piadina looks and feels like the Mexican tortilla. The flavours, however, are distinctly different. The Veg Piadina is stuffed with mushroom, sun-dried tomato.  It’s oozing with parmesan but don’t miss the hint of pesto. Rs 180
