Biryani boom on Oudh menu

The annual tribute to the best of biryani is back on the Oudh 1590 menu as the period dining destination in Deshapriya Park and Salt Lake has laid out the fourth edition of The Great Awadhi Biryani Festival.

The annual tribute to the best of biryani is back on the Oudh 1590 menu as the period dining destination in Deshapriya Park and Salt Lake has laid out the fourth edition of The Great Awadhi Biryani Festival.

“In keeping with our tradition, we have had two chefs specially flown in from Lucknow to curate this menu that offers quite a range of Nawabi flavours,” said Shiladitya Chaudhury, owner and partner, Oudh 1590.

The menu has a dozen biryanis including three vegetarian options: Awadhi Palak Biryani, Subz Yakhni Biryani and Multani Kanthal Biryani. 

Non-vegetarians have more options; take your pick from a menu of fish, prawn, chicken, mutton, duck and quail biryani.

Fish lovers can try Gomti Sugandhi Mahi Pulao, named after the sole fish from the Gomti river that flows past Lucknow. At Oudh, it is made with bekti marinated with gondhoraj lemon, garnished with lemongrass. “It’s a light dish for summer,” said Debaditya Chaudhury, a partner at Oudh. 
Yakhni Gosht Biryani is the pick if you love mutton. Cooked in meat broth, this biryani is also the right choice for those wanting to avoid spicy dishes in the heat. 
Not just the Anaras Raita, drinks to go with the biryani range from a refreshing Aam Panna to Gulab Sherbet and the slightly filling Badam Sherbet.
Our favourite from the vegetarian menu is the Multani Kanthal Biryani. Well-cooked, tender chunks of kanthal or baby jackfruit are blended with Indian spices and cooked with basmati rice, dum-style. Not too spicy, this one has a strong aroma of cardamom. Pair it with Anaras Raita for a complete meal.
