Vinayak A. loves his job of muddling, churning and creating new cocktail recipes. At Club Czar by Talli Clinic, a happening pub in Delhi, the 25-year-old Vinayak is experimenting with new ingredients all the time.

Vinayak says that he’s most happy when experimenting and learning about mixology. Before joining Club Czar, Vinayak worked as bar captain at Tunes N Tonic in Mysore. “My father was a hotelier, so I was drawn to a similar profession,” he says. He studied hotel management at the University of Mysore, graduated in 2009 and began working at Tunes N Tonic.

He moved to Delhi earlier this year and joined the front desk at Ibis Hotel. But he craved for a job at a nightclub. “Working at a nightclub is exhilarating. Since Club Czar is an automated bar and I am a technology enthusiast, I grabbed the chance to work here,” he adds.

Automated bars, which dispense drinks once the bottles have been installed in the machine, says Vinayak, are sure to become a hit in India. “They are a lot like water dispensers, only with many bottles attached on top of the machines,” Vinayak explains. At the press of a few buttons, the exact amount of alcohol that is required for specific drinks gets poured into the glasses. Once the bartender has done the muddling, the machine can make 10-12 drinks at the same time, he adds.

Caipiroska

Ingredients: • 60ml vodka • 4 wedges of lemon • 2 tsp sugar, super fine

Method:

Muddle the lemon wedges and sugar together in a chilled old fashioned glass. Add vodka to the mixture and stir well. Add crushed ice to the drink and serve.

Diamond Fizz

Ingredients: • 45ml gin • a dash of lemon juice • sugar syrup to taste • 10ml Champagne • a lemon wedge

Method:

Fill a shaker with ice cubes and add lemon juice, gin and sugar syrup. Shake and strain the drink into a chilled old fashioned glass. Top the drink with Champagne and garnish with a lemon wedge.
