The hilsa finds place of pride in the new dishes at 6 Ballygunge Place.
Opaar Bangla classics like Padma Nadir Ilish Jhol, Ilish Biryani and Sylheti Ilish Bhaja have made it to the menu as have age-old Bangal recipes like Ilish Matha Ar Dim Deya Kachu Saager Ghonto.
Meghnar Karai Bhapa Ilish, though it sounds like an Opaar Bangla item, fuses flavours from both sides of the river — its light gravy has “north Bengal ingredients like coconut and posto,” said executive chef Sushanta Sengupta.
“People these days stay away from hilsa as it has a lot of bones. So we included boneless items too. I would recommend the Achari Ilish Kumror Doga Dewa, where the gravy is made with specially pickled green chillies. It has a tangy taste that’s very different from the traditional hilsa dishes,” Sengupta added.
If picking bones is not your thing, go for the boneless Laupata Diya Ilish Maachher Cutlet or Smoked Hilsa. End your meal with Ilish Maachher Tok.
