Harpal Singh Sokhi of Turban Tadka fame (Food Food channel) was in town to announce a chain of casual-dining restaurants called Funjabi Tadka, which he plans to open next year in Calcutta. His restaurant, like his show, will feature “simple, homestyle Punjabi food”, recipes for which have been handed down over generations. His recipe for Kali Mirch Ka Gosht, for example, is from his father.
Kali Mirch ka Gosht
Ingredients
750g mutton, cut into 1½-inch pieces (on the bone)
3-4 tbsp oil
4 black cardamoms
6-8 cloves
1-inch cinnamon stick
2 onions (sliced)
½ tsp turmeric powder
2 tbsp ginger-garlic paste
Salt to taste
1 tsp Punjabi garam masala powder
1 tbsp black peppercorn, crushed
Juice of one lime
Method
Heat oil in a non-stick pan. Add black cardamom, clove, cinnamon, onion and saute till the onions turn light brown. Add mutton and saute till the juices are sealed in.
Add turmeric powder, ginger-garlic paste and saute. Sprinkle salt.
Cover and cook for 25-30 minutes. Add water at regular intervals; let it cook for sometime.
Add Punjabi garam masala, crushed black peppercorn and lime juice. Continue to stir until mutton is cooked.
Serve hot.
