‘Sauce’ is a French word that means a relish to make our food more appetising. Sauces can be liquid or semi-liquid foods devised to make other foods look, smell, and taste better.
When we hear the word ‘sauce’, we usually think of creamy white sauce, made with butter, flour and milk or cream. Then we have brown sauces, generally meat and wine-based, among the most flavourful. Fish and seafood sauces are great for fish-lovers while egg-based sauces like the B?arnaise, Hollandaise, Sabayon, all taste delicious because of the butter and eggs! Last but not the least, there are the rich and caloric dessert sauces ? Caramel Butter Cream sauce, rich chocolate sauce, butterscotch ? the list is never-ending!
Some sauces are believed to be healthy as they are low in calories, low in sodium, low carbohydrate, low cholesterol. There are many healthier versions of many sauces. There are many different fruit and berry sauces that go well with pancakes, cakes, ice cream and other desserts, as also entr?es if suitably paired. Like chicken with an orange sauce, or fish with a lemon sauce. You can glaze a fish fillet with sauce before baking it or sauce a grilled fish. Yet that same sauce can enhance olive oil-roasted vegetables or become a salad dressing.
One sauce leads to another. Tomato sauces have infinite possibilities. Vegetables and fruits can be pur?ed to make a full flavoured sauce. If you want to go light on sugar but don’t want to use a sugar substitute, use very ripe fruit. Even sauces with alcohol are a hot favourite.
sherry cream sauce
This is delicious with fish or seafood.
Ingredients: 2 tbs butter; 2 cloves garlic, minced; 1 tbs finely chopped onion; 1 cup cream; 2 tbs sherry; salt and pepper, to taste; paprika to taste; ground nutmeg (optional)
Method: Melt butter in saucepan over medium-low heat. Add the garlic to the butter. Add the chopped onion. Saut? for about 1 minute. Add cream and sherry; bring to a simmer. Reduce heat and simmer for 5 to 8 minutes, to reduce the sauce by about 1/4 to 1/3. Taste and add salt and pepper, along with other seasonings you might like.
