A heady mix of malt and munch

Curated whisky cocktails and malts paired with a delish menu — that’s what the Singleton Dinner in association with The Park, was all about. Curated whisky cocktails and malts paired with a delish menu — that’s what the Singleton Dinner in association with The Park, was all about. Brandon Toborg, luxury brand ambassador, Diageo RPC-EAST, churned out innovative cocktails while Sharad Dewan, regional director, food production, The Park, curated a special menu to be paired with the malts. THE PAIRINGS

Salad with Singleton Glen Ord 12 years: Made of rocket, romaine, caramelised mango, feta crumble, candied tomato, chilli walnuts and smoked vinaigrette, the salad goes well with the smokiness of the malt that is often termed as the most balanced malt of Scotland.
Oops! with Dalwhinnie: Tiramisu in a chocolate shell with Dalwhinnie instead of the usual Kahlua has been interestingly named “Oops!” because it is dropped onto your plate where it breaks into creamy pieces.

Sherlock and Watson (above) and Motto Umami were among the whisky cocktails that were stirred up.
“While the cocktails are Japanese-style, the malt pairings are more classic with very interesting food on the side,” said Brandon Toborg.
Pulled Kosha Mangsho Missi Roti Tacos with Talisker 10 years: Kosha Mangsho gets a twist with missi roti, coriander, peanut pesto, Cheddar and date relish. The meaty flavour is perfect for the strong Talisker that is smoky with strong barley-malt flavours.
Zen-style Bibimbap with Glenkinchie: The soft, sweet malt with honey and floral notes is paired with the classic oriental Bibimbap, to ensure it’s a good, light gastronomical match.

“The cocktails are like culinary cocktails so it was very interesting to come up with the menu. The idea was to create a menu that did not overpower the whisky but complemented it,” said Sharad Dewan.
