tomato soup
Ingredients: 4 large red tomatoes, peeled, seeded and chopped; 1 onion, chopped; 1 cucumber, peeled and chopped; 1 tsp vinegar;1 tsp sugar, salt and pepper to taste, Celtic sea salt and freshly ground pepper
Garnish: 12 pitted black olives, quartered; 1/4 cup peeled, seeded and diced red tomato; 1 tbs extra virgin olive oil
Method: In a high-speed blender, combine the tomatoes, onion, cucumber, vinegar and sugar, and process till smooth. Pass the pur?e through a fine mesh sieve and season with salt and pepper. Adjust the consistency as desired. Pour the soup into bowls. Garnish with olives and tomato. Drizzle the olive oil around the soup and serve.
