From salads whose freshness are preserved in a jar and are mixed on your table to a risotto that is presented like a flower pot, the new menu at Cafe Swiss, to be launched on August 6, fuses local ingredients with trending techniques such as incorporating edible ash, gold dust, microgreens and edible flowers. The menu that has retained the favourites has a mix of Asian, Continental and Indian dishes.
“Great ingredients, some superb cooking methods, different textures, yet simple, chef-crafted food is what diners can expect from the new menu,” said Ashish Rout, executive chef, Swissotel Kolkata Neotia Vista.
24 Carat Gold & Dark Chicken Dim Sum: Using a potato starch sheet infused with ash and beetroot, these dim sums have hand-pounded chicken and chive as their stuffing and are dusted with actual gold dust from a gold leaf. Rs 395-plus
Emiliana: This thin-crust hand-rolled pizza is as traditional as it gets, giving the overload of cheese a miss but piling up Parma ham instead. Arugula and Parmesan shavings add texture and flavour. Rs 675-plus
Porcini Risotto Flower Pot: The risotto made in porcini stock is topped with dried porcini soil, dehydrated cauliflower chips, mushrooms and microgreens, giving it the look of a flower pot. The soil’s smokiness combines with the Parmesan and butter-laden risotto to give it a unique flavour. Rs 700-plus
Vitality in Jar: This is a fresh and hearty salad made with watermelon, feta, sprouts, chick peas, rocket leaves, baby tomatoes and crispies, served in a glass jar and mixed right in front of you with some lemon and olive oil dressing.
