With monsoon on the way out, it’s time to make the most of the hilsa while it’s still available. Hilsa Hungama at The Lalit Great Eastern gives you a chance to do just that.

The menu, curated by Madhumita Mohanta, executive chef, offers an amalgamation of the best of recipes from both epaar and opaar Bangla.

“Ilish is an inseparable part of any Bengali. I have seen my mother cook both East and West Bengal styles of ilish at home and I learnt and mastered both the styles. Ilish, to me, is pure love, whichever way you cook it,” said Madhumita.

Pocket pinch: Rs 1,250-plus for one (includes a side of rice and salad)

Ilisher Tok Jhal: Hilsa simmered in a spicy and tangy gravy. 
Borishali Ilish: The fish is cooked in a mustard and coconut gravy, using an 
age-old recipe from opaar Bangla. 
Doi Ilish: Hilsa poached in a rich mustard gravy, laden with yogurt, was our fave from the menu. The raisins added the right amount of sweet to the tangy gravy. 
Jeera Bata Diye Begun Bori Ilish er Jhol: Hilsa cooked with eggplant and lentil dumplings with the flavour of cumin in the gravy. 
Ilisher Tel Jhol: Cooked with nigella seeds tempered in mustard oil, the hilsa comes with pumpkin slices. 
Dhumrogondhi Ilish: Boneless smoked hilsa meets quintessential Bengali flavours in this preparation laden with mustard.
