Keema Biryani: A fave among most patrons, the Keema Biryani has mutton mince flavoured in whole garam masala, which is arranged in layers along with the boiled basmati rice. It can be easily shared, and if you’re someone who misses their meat chunks, then you could order a side of Gosht Chaap. Rs 375-plus

Currently in its fifth year, the Great Awadhi Biryani Festival has been a rage at the Oudh 1590 outlets for its flavours and variety. With options in both vegetarian as well as non-vegetarian, each biryani is distinctly individual in its taste and ingredients. “We started working on this year’s festival almost eight months ago and it takes a long time to research and come up with new items. The biryanis served during the festival are not a part of the regular menu and hence each year our patrons are pretty surprised by the variety,” said Shiladitya Chaudhury and Debaditya Chaudhury, partners, Oudh 1590. t2 walked in for a tasting. 

Subz Yakhni Biryani: Vegetarians too can make the most of this festival with the Subz Yakhni Biryani, a mild preparation with the goodness of paneer and soy chunks. Another vegetarian option is the Subz Sugandhi Kofta Biryani which has paneer, carrot and mawa-based koftas instead of meat.

Mahi Kofta Biryani: Bekti meets mashed potatoes, chopped ginger and some green chillies in a spicy, fried kofta which is then added to some light and fragrant rice and then put on dum to create the Mahi Kofta Biryani. This would be any seafood lover’s go-to biryani for sure. Rs 410-plus
Sugandhi Murgh Biryani: The aroma of gondhoraj from Bengal marries the richness of Awadh in this one. Succulent pieces of boneless chicken are marinated in cream and curd. Once these pieces meet the biryani rice, the juice of gondhoraj lime is added to bring out the fragrance in the dish. Rs 350-plus
