A week to celebrate flavours from Thailand

The Thai Festival organised by the Royal Thai Consulate-General in the city was inaugurated at The Loft in Quest on June 1. Fruit carving, Thai floral decorations, games and a photography exhibition showcased a brief teaser of what the events spread over a month entail. Snapshots...

The Thai Festival a la carte menu, curated by chef Kluaywan Junsawat and chef Ratree Pirom, features a mix and match of flavours like Kaffir lime, chilli paste, galangal and herbs from Thailand.

“We are delighted to be a part of the Thai week. The authentic delicacies created by our chefs from Thailand are a perfect blend of distinct flavours, a coexistence of salty, spicy, sour, sweet, bitter and spicy,” said Atul Bhalla, area manager east, ITC Hotels and general manager, ITC Sonar.

ON THE MENU

Khao Phad Sappalod: This traditional Thai fried rice is flavoured with curry powder, pineapple, cashew nuts, raisins, carrot and prawns. Rs 950-plus
Kai Phan Takrai: A twist to chicken lollipop, this dish has chicken marinated with chopped lemongrass, red chilli and basil leaves and served with lemongrass sticks for added flavour. The dip on the side offers a hint of lemongrass, onion, garlic, tomato and Thai chilli. Rs 1,200-plus
Khaoniao Mamuang: Sticky rice soaked in water for a day and then steamed and soaked in coconut milk with sugar and salt to form this dessert, served with mango and sesame seeds. Rs 700-plus
Hormok Pla: Steamed bekti is mashed and flavoured with red curry paste, coconut milk, Kaffir lime leaves and basil and comes to your plate wrapped in banana leaf. Rs 1,500-plus
Tomsap Phak: This mushroom soup is flavoured with galangal, lemongrass, Kaffir lime, basil and parsley, served with fried onions, chillies, and cherry tomatoes. Rs 650-plus 
(L-R on top) Chefs Ratree Pirom and Kluaywan Junsawat showed how to rustle up Yam Mamuang (Thai raw mango salad). 
Ingredients: Peanuts, roasted coconut shavings, coriander, spring onions, onions, chilli, raw mango, sugar syrup, soya sauce and a pinch of salt.
Method: Cut a raw mango into thin slices and mix with the remaining ingredients in a bowl.

Sawadee Kolkata, the Thai food festival  menu curated by Phusirimongkhonchai Suria, the head chef of Oko, a pan-India restaurant chain specialising in Chinese, Japanese, Thai and Indonesian cuisine, will be on at The Legacy Grill till June 10.
On June 2, chef Suria conducted a masterclass where he whipped up a Khao Soi soup and Som Tam papaya salad.

“All the dishes on the menu are authentic. They actually taste very different from how Thai cuisine is made here. Calcuttans will also experience the aroma of Thai food the way it should be,” said chef Suria, who is currently based in Chandigarh.

ON THE MENU

Khao Soi is a Thai-style soup cooked with coconut milk and Kaffir lime leaves. The rich and thick soup is perfect for a rainy afternoon. Rs 475 (veg) and Rs 525 (non-veg).
We loved the lemongrass and chilli sauce on the steamed fish in Pla Nung Manoo. Rs 1,025
Yum Woon Sen is a light noodles salad with nuts that add to the crunch. A garlic-based dressing gives it a subtle kick. Rs 575
